 RECIPES 

ENLIGHTENMEAL

CHOOSE PROTEIN
Lentils - Chickpeas - Green Peas - Kidney/Black/White/Pinto/Navy Beans - Horsegram - Hemp Seeds

The night before choose 1 or more proteins to soak in a glass dish - in the morning dump the water and add new

CHOOSE VEGGIES
Broccoli - Cauliflower- Beet - Cabbage - Radish - Carrots - mushrooms

CHOOSE HERBS
Cilantro - Rosemary - Basil - Thyme - Sage - Parsley - Oregeno - Dill

Rinse veggies well

Put protein, veggies, herbs and three cups of water into a steamer or pressure cooker and cook to desired length. I pressure cook on high for 4 minutes

Put coconut oil, non-fortified organic yeast and celtic salt in a bowl

After cooking, strain food and add to bowl hot until coconut oil melts and stir well

ADD EXTRA TOPPINGS

Hemp Seeds - Chai Seeds - Sunflower Seeds - Mung Bean Sprouts - Broccoli Sprouts

 

VEGAN YOGI PAELLA

2 tablespoon avacado or coconut oil
Chickpeas
Mushrooms
2 tomatoes or grape tomatoes
1 cup frozen artichoke hearts
1 cup frozen peas
2 cups Basmati rice(soaked)
4 cups vegetable stock
2 teaspoon turmeric powder
Salt and black pepper to taste

Heat the oil in a paellera or a pan over medium heat and when it's hot, add the chickpeas, chopped tomatoes and cook for 5 minutes

Heat the veggie broth

Add the rest of the veggies and cook 5 minutes more

Add the rice and cook until it begins to be translucent

Pour the vegetable broth (hot), add the turmeric powder, salt and black pepper to taste

Stir the paella until all the ingredients are mixed and cook over medium or medium high heat for 15 minutes or until the rice is cooked. Add more vegetable broth if the rice is hard and dry

Let stand the paella (covered) for at least 5 or 10 minutes

SWEET POTATO NACHOS

Pressure cook, steam or bake sweet potato slices and soaked walnuts or nut mix, soaked chickpeas, cilantro and radish

Mix nuts, chickpeas, cilantro and radish with avocado, black olives, cut up grape tomatoes, black beans and lemon or lime juice in a bowl and put it on top of potato slices

Top mix with sugar free ketchup or salsa

OUT OF THIS WORLD NUT BUTTER

Equal Parts: Sunflower Seeds - Macadamias - Cashews(soak nuts overnight)

 

2 Tbsp: Olive Oil for Every Cup of Nuts

Add to mixer and mix for 5-10 minutes

Store in a glass container

Eat with a spoon and spread on bananas for more energy

 

KUNDALINI AWAKENER

CHOOSE BERRIES

Blueberries - Raspberries- Blackberrys- Strawberries

Mix berries and organic coconut cream

Add honey, if you desire

Pour into glass container and freeze
